Cozy Cajun Potato Soup

What ingredients do you need?

  • 12 to 13 ounces andouille sausage
  • 1 tablespoon olive oil
  • 4 large potatoes, peeled and diced
  • 3 cloves of garlic, minced
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 1 celery rib, chopped
  • 32 ounces of chicken broth
  • 3 tablespoon of Cajun Magic seasoning
  • 1/2 teaspoon paprika
  • 1 teaspoon of Grover's Good Ole' SPG
  • 1/4 teaspoon cayenne
  • 1 cup of heavy cream
  • 1 1/2 cup freshly shredded cheddar cheese

How do you make it?

1. Slice your andouille sausage about 1/4 thick and brown on medium in a dutch oven or soup pot. Set sausage aside keeping the fat renderings. 

2. In the same pan, add a tablespoon of olive oil. Add your garlic, red pepper flakes, onion, sweet red pepper and celery. Cook and stir until vegetables are softened, 5-7 minutes.

3. Once your vegetables are soft, add your andouille, potatoes, broth, and seasonings to the pot and let it simmer away until the potatoes are fork tender. Reduce the heat to low, and stir in the heavy cream, and 1 cup of the cheddar cheese until cheese is melted.

4. Serve hot and top with your favorite toppings like green onion, extra cheddar cheese, crumbled bacon, or even a dollop of sour cream!
